Freezer burn is not a mystery: it is air. What air does to a steak over three months is oxidation across the surface and ice crystals through the middle, and taking it out is the difference between throwing that steak away and cooking it happily half a year later. Sous-vide has a second reason to want the air gone — a bag with any left in it floats, and a floating bag does not cook evenly.
What it is for
Four cycles is what separates this from the single-button sealers. Dry and moist change how hard and how long the pump works, so a wet cut of meat does not have its juices drawn up into the machine, while the gentle setting keeps a full-strength vacuum from flattening bread, berries or anything else with structure to lose. A cutter is built into the lid, so bags come off the roll at whatever length the job needs instead of being bought in fixed sizes. In the box: five 8x10 bags, an 8x118 roll, and a hose for canisters, marinating containers and jar-sealing lids.
Best for: buying meat in bulk and portioning it, sous-vide cooking, weekly meal prep, and keeping coffee, flour and rice out of contact with air.

- No-Vacuum Option-The vacuum bag sealer also gives you the option of sealing without vacuuming or extracting air. Use it to reseal packages of chips, bags of lettuce, or any other open plastic packaging. This machine works with bags up to 11” wide.

Common questions
Will it work with ordinary freezer bags?
No. External sealers need textured or embossed bags, because the small channels moulded into them are the only route the air has out. A smooth bag simply gets clamped shut with the air still inside it.
Can I seal soup or anything liquid?
Not while it is liquid. Freeze it into a block first and seal the block — otherwise the pump draws the liquid up the bag and into the machine, which is how most vacuum sealers die.
What is the hose used for?
Anything that seals through a valve rather than through a bag: vacuum canisters, quick-marinating containers, and the lids that turn ordinary mason jars into vacuum storage.
